Cuban Pork Chops
2 teaspoons ground cumin
1/4 teaspoon ground red pepper
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 four-ounce boneless center-cut pork loin chops (about 1/2 inch thick)
1 banana, diagonally cut into 1/4 inch thick slices
1 large garlic clove, minced
2 teaspoons grated lime rind
1 tablespoon fresh lime juice (about 1/2 lime)
Fruited Curry Rice
1/2 cup water
1/2 teaspoon butter
1/8 teaspoon salt
1/4 teaspoon curry powder
1/2 cup instant long-grain rice
1/4 cup chopped tropical dried fruit
2 tablespoons chopped fresh cilantro
Directions
- Cuban Pork Chops
- Combine cumin, red pepper, cloves and salt
- Rub mixture evenly over both sides of pork
- Heat a large nonstick skillet coated with cooking spray over medium-high heat
- Add pork and cook 3 minutes on each side or until done
- Transfer pork to plate and keep warm
- Coat pan with cooking spray
- Add banana and garlic and saute 1 minute
- Stir in lime rind and juice and cook 30 seconds
- Place pork chops on plate and spoon banana mixture over pork
- Fruited Curry Rice
- Bring water to boil in a medium saucepan
- Add butter, salt, curry powder and rice and stir gently
- Cover and remove from heat and let stand 5 minutes or until water is absorbed
- Add cilantro and fluff with fork
