Cuban Pork Chops and Fruited Curry Rice

Cuban Pork Chops
2 teaspoons ground cumin
1/4 teaspoon ground red pepper
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 four-ounce boneless center-cut pork loin chops (about 1/2 inch thick)
1 banana, diagonally cut into 1/4 inch thick slices
1 large garlic clove, minced
2 teaspoons grated lime rind
1 tablespoon fresh lime juice (about 1/2 lime)
Fruited Curry Rice
1/2 cup water
1/2 teaspoon butter
1/8 teaspoon salt
1/4 teaspoon curry powder
1/2 cup instant long-grain rice
1/4 cup chopped tropical dried fruit
2 tablespoons chopped fresh cilantro

Directions

  1. Cuban Pork Chops
  2. Combine cumin, red pepper, cloves and salt
  3. Rub mixture evenly over both sides of pork
  4. Heat a large nonstick skillet coated with cooking spray over medium-high heat
  5. Add pork and cook 3 minutes on each side or until done
  6. Transfer pork to plate and keep warm
  7. Coat pan with cooking spray
  8. Add banana and garlic and saute 1 minute
  9. Stir in lime rind and juice and cook 30 seconds
  10. Place pork chops on plate and spoon banana mixture over pork
  11. Fruited Curry Rice
  12. Bring water to boil in a medium saucepan
  13. Add butter, salt, curry powder and rice and stir gently
  14. Cover and remove from heat and let stand 5 minutes or until water is absorbed
  15. Add cilantro and fluff with fork
