Garam Masala Lamb Chops with Indian Spiced Couscous

Garam Masala Lamb Chops
1.5 tablespoons prune baby food
1 teaspoon garam masala
1/2 teaspoon minced garlic
1/2 teaspoon salt
4 (4-ounce) lamb rib chops, trimmed (about 1" thick)
1/3 cup breadcrumbs
Cooking spray

Indian Spiced Couscous
1 cup water
1/2 cup dried fruit bits (such as Sunmaid)
2 teaspoons light butter
1/4 teaspoon salt
1/4 teaspoon ground turmeric
Dash of ground cardamon
1/4 teaspoon ground cinnamon
1/2 cup whole wheat or plain couscous, uncooked
3 tablespoons thinly sliced green onions

Directions

  1. Garam Masala Lamb Chops
  2. Preheat broiler
  3. Combine first 4 ingredients in a shallow dish
  4. Rub lamb chops with prune mixture; then dredge in breadcrumbs
  5. Coat lamb with cooking spray.
  6. Place lamb on broiler pan coated with cooking spray.
  7. Broil 3 to 4 minutes on each side or to desired degree of doneness.
  8. Let stand 5 minutes before serving.
  9. Indian Spiced Couscous
  10. Combine first 8 ingredients in a medium saucepan and bring to a boil over medium-high heat.
  11. Stir in couscous; return to a boil
  12. Cover and reduce heat to low; simmer 2 minutes or until water is absorbed.
  13. Remove from heat; add green onions
  14. Cover and let stand 5 minutes.
  15. Fluff before serving
