1/2 cup chopped onion
1/3 cup lime juice
6 cloves garlic, coarsely chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
4 boneless skinless chicken breasts (1 pound total)
3 tablespoons chopped fresh cilantro (optional)
salt and black pepper
Directions
- Combine onion, lime juice and garlic in food processor and process until onion is finely minced.
- Add cumin, oregano, thyme and red pepper and mix well.
- Transfer to large resealable food storage bag and add chicken.
- Refrigerate 30 minutes or up to four hours, turning occasionally
- Remove chicken from marinade and discard marinade
- Place chicken on grill over medium heat and grill 5-7 minutes.
- Season with salt and pepper and garnish with cilantro
