Grilled Chicken Adobo (requires marinade)

1/2 cup chopped onion
1/3 cup lime juice
6 cloves garlic, coarsely chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
4 boneless skinless chicken breasts (1 pound total)
3 tablespoons chopped fresh cilantro (optional)
salt and black pepper

Directions

  1. Combine onion, lime juice and garlic in food processor and process until onion is finely minced.
  2. Add cumin, oregano, thyme and red pepper and mix well.
  3. Transfer to large resealable food storage bag and add chicken.
  4. Refrigerate 30 minutes or up to four hours, turning occasionally
  5. Remove chicken from marinade and discard marinade
  6. Place chicken on grill over medium heat and grill 5-7 minutes.
  7. Season with salt and pepper and garnish with cilantro
